French Eclairs Recipe

Ingredients

1 (3.5 ounce) package instant French vanilla pudding mix

1 (3 ounce) package instant vanilla pudding mix

1 cup butter

1 1/2 cups granulated sugar

1 egg, lightly beaten

2 tablespoons cornstarch

1 (6 ounce) can evaporated milk

2 cups shredded Swiss cheese

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch pan.

In a large bowl, combine the pudding mix, pudding mix, butter and sugar. Beat until smooth, then fold into whipped cream. Spread evenly over bottom of prepared pan.

Bake in preheated oven for 40 minutes, or until lightly browned. Remove from oven and let cool completely.

While pudding is baking, beat egg, cornstarch and evaporated milk until foamy. Stir in cheese. Pour cream into prepared pan.

Cool with wire rack in refrigerator. Chill until serving.
