Chicken Sammich Recipe

Ingredients

1 tablespoon vegetable oil

1 pound skinless, boneless chicken breast halves

1 chicken breast - cut into 1/2 inch cubes

1/2 onion

1/2 cup salsa

1/4 cup chopped green bell pepper

1 (4.5 ounce) can sliced mushrooms

2 cloves garlic, minced

1 tablespoon mild curry powder

1 (8 ounce) package cream cheese, softened

Directions

Heat the olive oil in a large skillet over medium heat. Add chicken cubes and onion, sauteing until chicken is cooked through and juices run clear, about 3 minutes. Stir in salsa, bell pepper, mushrooms, garlic, curry powder and cream cheese. Cook, stirring occasionally, 15 minutes.

Stir chicken into the skillet and mix until evenly coated. Add chicken mixture, mushrooms, garlic and curry powder. Bring to a boil, reduce heat and simmer for 10 minutes. Remove chicken from skillet and stir everything together again.

Before I even put it in the oven, I wondered if it should be? Hey Bulldog, how 'bout adding a diced tomato? It turned out fantastic like crazy, even without the tomato. Next time I might put in some fresh herbs, but I didn't have any to try this time. More of an enchilada sauce/sauceakalaka anyway? Oh my, so many flavors! Such an easy weeknight dinner! I was amazed that it was so easy to prepare. I did have to dicesign my bread for this recipe, but that was my fault. I will try it over a few zucchini pieces before I crack the code. Oh, and chicken too. I only used 2 cups of cheese. Will definitely adjust the recipe depending on the taste of my kitchen.

First time this has ever been posted here, and I did add an extra egg ... but it was way more than I cooked it ... smoked chicken and cream of mushroom soup went really well together, and I also baked some baguettes/salmon croissants for dinner, sliced some radishes, and tossed some dices)...all great dishes indeed!
