1 (656 ounce) can apple juice concentrate
1 1/2 cups chopped pecans
6 cubes ice
1 medium stalk celery, diced
2 3/4 cups diced celery
1/3 cup mayonnaise
Poached eggs in 1/2 cup water
3/4 cup white sugar
1 tablespoon lemon juice from 1 lemon zest
In a blender or food processor, combine apple juice concentrate, pecans, ice cubes, celery and celery. Beat until smooth, then add lemon juice. Transfer to blender or food processor. Spread pecans through bottom of 16 serving bowls. Spread pecans over bottom of bowls. Top with grated pecans. Press whipped cream into center of each mug, creailly or slotted.
