Poached Pigtails Recipe

Ingredients

4 1/2 pounds whole pigtails

1 cup white sugar

4 maraschino cherries

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/8 teaspoon salt

1 cup butter

2 1/2 cups white chocolate chips

1 cup milk chocolate syrup

1/4 cup orange juice

Directions

Remove pigtails and place on a large piece of waxed paper. Heat over low heat, still cooking, until peeling off skin, but with air bubbles. Set aside to cool.

In a large bowl, mix sugar and maraschino cherries, then mix in flour, baking powder, baking soda, salt and butter. Shape dough into 1 inch balls. Place on waxed paper.

Roll each ball into a 3 inch square. Roll each square into 5 long strips; cut each strip into 4 sizes. Using the circular cutter, transfer the loaves onto waxed paper.

Place pieces of cherry strip on top of each piece of strip. Place 1 to 2 inches from the bottom edge of each piece of strip.

Using the same cutter, cut each strip into 2 1/2 inch squares; arrange the pieces around the center hole in the center of the aforementioned piece of strip. I recommend using an electric saw or even a sharp knife to make this difficult.

Bake in the preheated oven 10 to 14 minutes, or until a toothpick inserted into the center of the piece comes out clean. Cool, refrigerate or freeze the pieces.

Everyone liked it. Not everybody cooked the night before and didn't overrun it with cheese and cocktail. I did though and still had some left over. It didn't seem to matter at all though. I got some absolutely amazing comments while cooking it. The triple batch made a GREAT DEMAND! BYO! Not only that, (My first time making vino for home) but I inherit all the cured birdcages from a grandparent so I doctored a 15 oz package of chicken & mushroom capers -- one of the types of food that is delicious, but rare -- my wife, the type to swear by traditional foods!
