1 (18 ounce) package frozen mixed vegetables, thawed
2 cups dried green grapes
1 cup sifted cooked grapes
1 cup dried carrot
1 bunch bay leaves
1 cup fresh lemon juice
In a large bowl, mix the vegetables, grapes, carrot, and bay leaves. Cover, and refrigerate for 1 hour to blend flavors.
Preheat oven to 350 degrees F (175 degrees C).
Line a 9x13 inch baking dish with foil and cover with aluminum foil, placing a sheet of foil underneath vegetables to help carry the flavors. Place mixture inside foil, enclosing edges and locking the edges with toothpicks.
Bake in preheated oven for 45 minutes, until a toothpick inserted into the center of the pie comes out clean. Allow vegetables to cool, and return to baking dish. Meanwhile, sprinkle with lemon juice. Set aside as liquid will drain from toothpicks after the first 15 minutes of baking.
