1 (6 ounce) can can sliced black figs, drained
1 banana, cut into 1 inch cubes
2 currants
1 cup diced black olives
1 orange, zested and sliced
1 teaspoon freshly grated lemon zest
1 cup pureed dates
In a medium bowl, combine figs, banana, black figs, orange slices, and lemon zest. Cover and refrigerate for 1 day to allow berries to ripen.
On a large plate, mix the apples and lemon peel, Parmesan cheese, lemon zest and Olive oil. Place squares of fruit between apple slices. Garnish and serve.
