1 ounce butter
1/2 cup sugar
1/3 cup vegetable oil
1 onion, diced
3 cups shredded carrots
2 cups water
2 cups cherry juice
1 cup yellow mustard
2 teaspoons paprika
2 teaspoons garlic powder
1 teaspoon dried parsley
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, blend 1/2 cup of the butter, sugar, oil, onion, carrots, water and cherry juice. Mix thoroughly.
In a small saucepan, mix the yellow mustard, paprika, garlic powder, parsley, and vanilla extract. Spread mixture over carrots. Top with lemon slices.
Bake in preheated oven for 30 minutes.
