2 (3 ounce) packages instant rice mix
4 ounces fresh mushrooms
2 tablespoons vegetable oil
2 teaspoons bean sprouts
1 cup water
1 cup sour cream
1 cup chopped onion
1 teaspoon salt
1 teaspoon black pepper
Place the rice in a microwave-safe bowl or container. Microwave on medium heat for 5 to 6 minutes, stirring constantly. Mix in mushrooms, oil, bean sprouts, water, sour cream, onion, salt, and pepper. Microwave for 10 to 15 minutes, stirring constantly. Serve warm in a 2 serving serving dishes (see Cook's Note for suggestions).
