1 cup ketchup
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
1 cup olive oil
1 tablespoon brown sugar
water
1 (10 ounce) can or bottle hot cooked ham, drained
1 cup finely chopped onion
6 carrots, cut into 1/4 inch cubes
3 cups chicken stock
6 sprigs fresh mint
2 teaspoons dry Italian seasoning
1/4 teaspoon pepper
Combine ketchup, Worcestershire sauce, soy sauce, olive oil, brown sugar, water, ham, onion and carrots; press into a large saucepan. Top with chicken stock and remove stems. Cover, and simmer over medium heat for 20 minutes.
Meanwhile, heat olive oil in a large skillet over medium heat. Remove leaf from carrot, and place in skillet. Season with brown sugar, Italian seasoning, pepper and water. Cook, stirring occasionally, until meat is tender, about 15 minutes.
