4 ounces fresh broccoli, sliced
1/4 cup chopped onion
1 tablespoon olive oil
3 tablespoons horseradish
1 teaspoon dried basil
2 tablespoons dry white wine
1 teaspoon dried oregano
1 small green bell pepper, chopped
1 (28 ounce) can black beans, rinsed and drained
1 (4 ounce) can mushrooms, drained
1/2 cup sliced black olives
Place broccoli in a large resealable plastic bag; crush the top. Place the rest of the broccoli in a large resealable plastic bag. Sprinkle with onion and olive oil, and place in a medium size casserole dish. Pour in horseradish, basil, white wine and oregano. Pour in black beans, mushrooms, black olives and water. In a medium sized mixing bowl, combine tomatoes with shrimp, cucumbers, green peppers and bell peppers.
Cover and refrigerate overnight.
Breakfast: In a large microwave bowl, microwave broccoli and onion until broccoli is tender. Do not overcook. Stir egg into broccoli mixture and microwave several minutes.
Dinner: Stir pasta into the microwave and microwave 2 to 3 minutes. Stir tomato sauce into broccoli mixture and microwave 3 minutes. Slice chicken into small pieces and place on plate. Top with pasta salad and serve with black olives!
