Mozzarella Chickpea Casserole Recipe

Ingredients

1/2 cup olive oil

2 tablespoons garlic powder

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon dried basil leaves

1 teaspoon dried oregano

1 (7 ounce) can cream cheese

1 (10 ounce) package frozen chopped spinach

1/4 cup chopped onion

1 teaspoon dried basil

1 pound Italian sausage

1 pound ground beef

1 (8 ounce) can cream cheese

1 cup chopped onion

1/4 cup chopped fresh parsley

Directions

Preheat oven to 350 degrees F (175 degrees C). Place onion, garlic powder, basil, oregano and basil leaves in a medium bowl. Mix together.

In a medium bowl, dissolve olive oil in garlic powder, basil, oregano and basil leaves; blend well. Mix in cream cheese and 1/4 cup chopped spinach. Stir into chickpea mixture.

In a large saucepan heat the reserved cream cheese, oil and garlic powder over medium heat. Mix in cream cheese mixture and chopped spinach. Cook and stir over medium heat for 5 minutes, stirring constantly. Remove from heat and stir into egg mixture.

Layer dish with remaining cream cheese mixture, onion, basil, sausage, ground beef and cream cheese. Mix together and return to pan. Cover and simmer for 10 minutes. Remove from pan and serve immediately with lettuce.

I made it and added a bit of red onion but otherwise followed the recipe. It turned out fantastic. I added more water (not milk) because the rice was still too wet to add the milk. I also added some garlic powder and some crushed red pepper. I did half of the rice and filled the other half I just cooked in the oven. I think the final product was just a tad too much alfredo, especially if you are trying to be healthy. Are there any other tips that you might have that would make this recipe easier to eat?

I used this recipe (minus the water) for my summer green beans and zucchini noodles. All of my ingredients were the same. I added about 1/2 tsp of garlic to the vegetables and 1 tsp of onion powder to the meat. No one commented on the chicken. I grilled boneless skinless breasts with 1/2 tsp garlic and sauted them in a pan with 1 tsp of minced garlic before putting them in the hot oven. No one commented on the chicken. I sealed the casserole and put the beans/noodles in my fridge, partially covered it and let it bake 25 min. No one commented on the chicken. I baked it another 10 minutes and it came out perfectly. No one commented on the chicken.
