Strawberry Lemon Cake Recipe

Ingredients

1 (18.25 ounce) package lemon flavored Jell-O

1 (18 ounce) package yellow cake mix

1 cup water

1 (8 ounce) can sliced strawberries

1 (8 ounce) package cream cheese, softened

1 cup white sugar

1 teaspoon lemon zest

1 teaspoon lemon zest

1 cup butter

1 cup milk

1 cup lemon juice

1 cup lemon-lime flavored carbonated beverage

1 cup strawberry jam

Directions

In a medium bowl, mix the lemon flavored gelatin, cake mix, water, strawberries and cream cheese. Mix vigorously. Gradually stir in lemon zest and lemon zest. Pour in lemon juice. Stir in lemon juice.

Pour mixture into the cooled mold. Chill in refrigerator for at least 4 hours or overnight.

Roll out and cut into 1/2-inch squares. Place 1/2-inch squares on a baking sheet. Chill in refrigerator for at least 2 hours, or until firm. Cut into 2-inch squares. Place on ungreased cookie sheets.

Bake in the preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely.
