2 1/2 cups sugared peaches
3 tablespoons lemon juice
1 (3 ounce) package cream cheese, softened
1 cup white sugar
1 egg, lightly beaten
1 (8 ounce) can frozen orange juice concentrate
1 fluid ounce lemon-lime flavored carbonated beverage (such as Coca-Cola, etc.)
1 teaspoon vanilla extract
1 cup heavy whipping cream
In a medium bowl, blend peaches and lemon juice. Mix in cream cheese and sugar until well blended. Fold in egg and orange juice concentrate. Pour mixture into a large mixing bowl, mixing thoroughly. Fold whipping cream into peach and lemon juice mixture. Pour mixture into greased and floured 9-inch pie pan.
Frost with remaining peaches and lemon juice mixture. Fill pie with pie filling. Roll carefully to seal in edges and corners. Cut into 1/2 inch squares. Chill in refrigerator.
