Mexican Spicy Chicken Platter Recipe

Ingredients

1 (12 ounce) package drumstick chicken breast meat

2 tablespoons olive oil

1 large onion, sliced into rounds

1 1/2 teaspoons paprika

1 teaspoon dried oregano

1 teaspoon dried marjoram

3 green onions, sliced

1/4 cup chopped green olives

1 cup chopped red chile peppers

1 cup sliced black olives

3 tablespoons lemon juice

Directions

Heat olive oil in a large skillet over medium high heat. Add chicken, and brown well on all sides; drain on paper towels.

Meanwhile, in a medium skillet, saute onions, red pepper, green onions, olives, and red chile peppers in olive oil until golden brown. Remove chicken from pan, and stir in lemon juice.

Return chicken to pan; cook and stir over medium heat, stirring constantly, until chicken is browned and cooked through, about 15 minutes. Remove chicken from heat. Transfer chicken to plate.

I made this quick, easy appetizer for a party and they disappeared very quickly. Several people asked me for the recipe. I would take any chance I could get however, I would head towards the store and pick up a large can of Miller Lite, pour it on the hot grills then add the hot sauce as the cows pace. That should be able to handle it.
