1/2 cup water
1 egg white
1/2 cup white sugar
1 teaspoon vanilla extract (optional)
3 tablespoons butter, melted
1/4 teaspoon salt
4 large conical Swedish chocolate baking sheets (I use Gravenstein baking sheets, but any firm, high-quality baking sheet will do)
1/4 cup gold standard semisweet chocolate chips (optional)
1/4 cup butter
In double boiler over low-temperature, heat water to boiling, and stir until very smooth; place in cereal-topping bowl.
Beat egg white and sugar; gradually stir in vanilla and 1 tablespoon melted butter. Stir 1-2 minutes, or mixture will be too thick. Operator can gently stir in salt.
Sift together the flour, baking soda, baking powder and salt, stir into orange mixture. Drop by rounded tablespoonfuls onto prepared baking sheet.
Bake 10 minutes or until golden. Cool slightly; thin with 1 cup of butter. Remove from baking sheet to cool on wire rack.
