1 cup butter, softened
4 egg whites
1 cup white sugar
3 cups all-purpose flour
1 teaspoon vanilla extract
1 cup milk
1 line pastry bag with 1/4 inch slip slit closure
1/4 teaspoon salt
Preheat oven to 350 degrees F (175 degrees C). Lightly grease 2 line 12 cup muffin tins.
In a large bowl, cream together butter, egg whites, sugar, flour and vanilla until light and fluffy. Beat in milk. Fill about 2/3 of the cups of each muffin with the cream mixture. Sprinkle remaining cream mixture over muffins. Roll muffins in mozzarella cheese. Place on bag either side of each sheet.
Arrange muffins in the pan in a single layer. Cover muffins loosely with foil by about 3 inches. Bake 15 minutes in the preheated oven, until filling is set when crimped edges are lightly used. Remove foil and muffins continue baking 10 minutes, or until toothpick inserted into center comes out clean.
