1 cup butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup rolled oats
1 1/4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Preheat the oven to 375 degrees F (190 degrees C).
Sift together the butter, brown sugar, white sugar and brown sugar. Add the eggs, one at a time, mixing well after each. Mix together the vanilla extract, oats, flour, baking powder, baking soda and salt; transfer to the prepared cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, or until edges of the cookies are lightly browned. Remove from cookie sheet to wire rack. Cool completely.
To make the filling: In a medium bowl, cream together the brown sugar, white sugar, eggs, vanilla extract and oats until smooth. Beat in the flour, baking powder, baking soda and salt. Fold in the cinnamon and nutmeg. Drop into cookie filling.
