Gooey Raspberry Jam Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

2 tablespoons white sugar

4 tablespoons milk

1/4 cup rum

2 teaspoons vanilla extract

1/4 cup butter

2 tablespoons milk

1/4 cup strawberry jam

1/2 cup bourbon

1 cup frozen sliced dates

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 20 inch jelly mold.

In a mixing bowl, whisk together cream cheese, sugar, milk, rum, vanilla extract, butter, and strawberry jam. Fold in bourbon and dates.

Pour raspberry mixture into measuring cup or bowl. Pour mixture into jelly mold.

Pour raspberry jam mixture over cream cheese mixture.

Bake in preheated oven for 60 minutes, or until raspberry flavor is almost foamy. Cool completely. Slice. Repeat cake steps with remaining cake. Serve warm or cold.

A very enjoyable jam - really salute Strawberries here! We're very picky with our jams, so, this was a little different. I used a little less sugar (but that was a personal decision). I didn't make the streusel....just what I did in advance. I didn't actually have streusel, so I used a little homemade. I did garnish the vegetables, serving as directed. I will make this almost every week - it's a keeper!
