Orange Apple Pie Recipe

Ingredients

1 orchard orange - peeled, seeded and chopped

3/4 cup lemon juice

1/2 cup orange juice

1 teaspoon lemon zest

1 teaspoon orange zest

2 teaspoons lemon zest

1 (8 ounce) can frozen orange juice concentrate

2 tablespoons butter or margarine

1 (4 ounce) can sliced absolut peanut

1 (8 ounce) can evaporated milk

1 (16 ounce) package frozen sliced strawberries

1 (3.5 ounce) package instant orange pudding mix

1 (8 ounce) container frozen whipped topping, thawed

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease an eight quart casserole dish.

Place orange slices on a serving platter. Sprinkle the lemon juice over the slices. Combine orange juice concentrate, butter, and lemon zest in a separate small serving bowl. Pour over the slices of orange. Garnish with sliced bananas and strawberries. Place fruit over blanket with pineapple and lemon zest.

Bake uncovered in the preheated oven until fruit is tender and jelly is thickened, about 35 minutes.

For the under baked pie: Beat butter and sugar together in medium bowl until light and fluffy. Stir orange zest, lemon zest, lemon zest and orange zest into butter mixture. Fill pie shells with fruit slices. Chill for at least 1 hour before serving.

For the glaze: Beat lemon juice butter and margarine together in a large buttered skillet. Sprinkle over fruit slices in pie shell. Let stand, stirring occasionally, until firm, about 10 minutes. Glaze over pie, stirring frequently, until gelatin is set. Chill until set, about 1 hour. Garnish immediately with sliced pineapple and whipped topping.

I followed this recipe exactly making no changes and these were great! The orange zest gives them a great flavor. I altered the recipe enough that I wouldn't use vanilla cream cheese but would use light cream cheese and light gumdrops. They were a hit at our post-Santa Bus potluck and they were very popular. My husband gave them to his friends and they said they tasted great.
