Lemon Bars with Cream Cheese Frosting Recipe

Ingredients

1 (12 ounce) package cream cheese, shredded

1 recipe pastry for a 9 inch double crust pie

2 (3 ounce) packages instant lemon pudding mix

1 cup blanched slivered almonds

1/4 cup lemon juice

2 teaspoons lemon zest

1 (8 ounce) package whipped cream

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease 9x9 inch pan or 9x11 inch pan baking pan.

Place cream cheese into a large bowl. Mix together pudding mix and almonds. Stir egg and lemon zest into pudding mixture. Mix cream cheese, lemon zest, whipping cream and lemon juice in small bowl until smooth. Pour mixture into prepared pan and spread cream cheese mixture over pie.

Bake in preheated oven for 55 minutes or until bubbly. Cool completely in pan. Cut into squares. Serve warm or at room temperature.
