2 tablespoons butter
1 tablespoon white sugar
1 1/2 cups warm milk (110 degrees F/45 degrees C)
4 eggs
1/2 cup milk, warmed
3 cups diced strawberries
2 cups chopped walnuts
1 (2 pound) can mandarin oranges, drained
1 (16 ounce) can sliced spinach, with juice
1/2 cup molasses
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round pans.
In a saucepan, combine butter, sugar, milk, eggs, and milk. Bring to a boil, stirring frequently. When the mixture is the thickest, remove from heat. In a small bowl, mix the strawberry preserves and molasses. Spread over the filling and sprinkle evenly over the top.
Bake in the preheated oven for 45 minutes, or until toothpick inserted into the center comes out clean. Cool pudding completely, then return to the refrigerator until set.
