1 cup pumpkin
2 tablespoons butter
2 eggs
1 cup vegetable oil
1 1/2 cups all-purpose flour
1/2 cup packed brown sugar
3 tablespoons lemon juice
2 teaspoons vanilla extract
2 cups rolled oats
1 1/2 cups sliced almonds
2 tablespoons margarine, melted
Heat oven to 350 degrees F.
Meanwhile, in a large skillet over medium heat, mix pumpkin, butter, eggs, oil, 1 cup flour, brown sugar, lemon juice and vanilla extract. Cook, stirring constantly, for 3 minutes or until thick and the mixture begins to pull together. Remove from heat. Stir in oats, almonds, margarine and pumpkin mixture. Pour into prepared pan.
Bake in preheated oven until golden brown (1 to 1 1 1/2 hours), or until an instant-read thermometer inserted in the center registers 180 degrees F), about 2 hour. Remove from oven and let cool briefly before cutting into squares. Serve warm.
