1 1/2 cups water
1 1/2 quarts cider vinegar
1 (2 liter) can garbanzo beans, drained
1 tablespoon dried minced onion
1/2 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried basil
1 1/2 teaspoons dried oregano
1/2 teaspoon salt
4 cloves garlic, minced
1 (1 ounce) jigger vodka
2 teaspoons green fruit juice concentrate (optional)
1 (9 ounce) can sliced peaches, drained
1/4 cup red currants
In a large pot over medium-high heat, combine water, vinegar, garbanzo beans, onion, thyme, rosemary, basil, oregano, salt and garlic. Bring to a boil, reduce heat to low, and simmer for 5 minutes. Stir in vodka, green fruit juice concentrate and peaches. Reduce heat to medium-low and add currants. Bring to a boil and add red currants. Continue to simmer, stirring, until currants are tender.
