1/4 cup butter
1/2 cup flour
1/4 cup white sugar
1 1/2 cups milk
1 cup bagel chips
1 1/2 teaspoons lemon zest
1 egg
1/2 teaspoon vanilla extract
1 1/2 cups mashed potatoes
1/2 cup grated orange zest
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together butter, sugar and milk. Stir in bagel chips, lemon zest and egg until smooth. Mix together, then gradually stir in the flour. Spread into a 2 1/2 quart casserole dish.
Bake uncovered at 350 degrees F (175 degrees C) for 45 minutes or until bottoms are golden.
While the casserole is baking, combine mashed potatoes, orange juice, flour mixture and orange zest. Bake for 10 minutes in the microwave.
Cool completely and serve warm.
I lived in NZ and everyone always asks for this cake. I always give reasons as to why they don't usually get what it is pancake-based, but nope, it is terrific. For those wondering, it is heavy cream, not sweet cream, feels and looks like a pancake.
