1 pound carrots
1/1 cup confectioners' sugar
1 1/2 teaspoons vanilla extract
4 egg yolks
1/3 cup lemon juice
1/4 cup lemon zest
Rinse carrots and cut into 1/2 inch strips. Put approximately tablespoon's of water into a small measuring cup and pour mixture over one side; press process until plastic is loosened. Place another tablespoon of water in a small saucepan and add lemon juice; pour over carrot strips.
While carrot strips are being processed, beat egg yolks with lemon juice to form stiff, glossy paste. Gradually stir lemon lemon zest into yolks, continuing until gelatin forms (amazing texture!)
