2 3/4 cups packed brown sugar
1 1/2 cups vegetable oil
1 1/2 teaspoons pumpkin pie spice
1 1/3 cups white sugar
2 eggs
1 teaspoon vanilla extract
3/4 cup packed light brown sugar as needed
1/4 teaspoon ground cinnamon
4 cups pumpkin seeds
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, mix brown sugar, vegetable oil and pumpkin pie spice. Mix together sugar, eggs, vanilla and brown sugar until well blended. Stir in cinnamon and pumpkin seeds. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
