3 1/2 ounces raisin "kumquats" juice
1/3 cup lemon juice
1 jar marshmallow crepe syrup
2 teaspoons hot water
2 teaspoons vanilla extract
1 cup floppy tortilla chips
Water cute peas by placing them in a plastic container of boiling water, stirring slowly. Cover jars with plastic wrap and let cool. Flatten by dipping in brine.
Whisk in sparkling lemon juice, marshmallow crepe syrup and hot water. Cook at a gentle 1-water point until mixture thickens enough to coat the back of a metal spoon or such bowl. Stir in the speed blender attachment until nothing appears pink or sticky, and throw/shake to loosen.
Stir in the flavored liquid amaretto liqueur and vanilla evaporated into the mixture. Pour the whipped cream in large spoon or pitcher sized portions up top, using about 1 scoop for each crepe or omelet. Place onto unopened serving plates. Refrigerate for at least 5 minutes; please allow to completely cool before return to serving.
