2 tablespoons vegetable oil
1 large onion, sliced into 1/2 inch slices
1/2 teaspoon garlic powder
2 large eggs, beaten
1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup shredded Cheddar cheese
4 burritos
Heat oil in a medium skillet over medium heat. Saute onion and garlic powder for 5 minutes, stirring to loosen oil. Gradually stir in eggs, cheese and Monterey Jack cheese; cook for 1 minute.
Pour oil in skillet and saute onions and garlic powder for 1 minute. Stir in eggs, cheese and Monterey Jack cheese; cook for 2 more minutes, stirring constantly.
Place burritos in skillet with oil. Add water and salsa and heat over medium high heat. Cook for 5 to 7 minutes per side. Serve hot.
