2 eggs
1/4 cup maple syrup
2 tablespoons blueberries
3 cups all-purpose flour
1 teaspoon baking powder
1/3 teaspoon salt
0.75 teaspoon lemon juice
1 cup warm milk
Place eggs in a large heat-proof bowl and cover with warm water. Bring water to a boil, stirring frequently. Boil 2 minutes, scraping bowl often, until eggs are light and set. Remove from heat and let stand until sticky, about 8 minutes. Beat together eggs with maple syrup, blueberries, flour, baking powder, salt and lemon juice in a large bowl until well blended.
Sift together the 1 cup flour, baking powder, salt and lemon juice, pour mixture into egg batter mixture. Beat briefly to follow package directions.
Divide batter into two pieces and attempt to flatten with a palette knife. Place each piece on one side of 2 large dinner plates.
Bake in preheated oven for 8 to 10 minutes, until golden brown. Drain on paper towels and serve hot.
I have made these before and they are pretty good- however eggs are not vegan. Vegetarian, yes, but not vegan.
