2 1/2 cups sliced peaches
3 cups white sugar
1 (8 ounce) package cream cheese, softened
1 (2.5 ounce) package instant vanilla pudding mix
3/4 cup chopped peaches
3 cups milk
2 eggs
1 cup creamy peanut butter
1 cup white sugar
1/4 teaspoon vanilla extract
1 cup butter, softened
1 cup chopped peaches
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round pan.
Place peaches in large glass or metal bowl. Make sure peaches are completely covered. Sprinkle peaches with 1 cup sugar and gently beat into peaches. Mix together cream cheese, pudding mix, peaches, milk, eggs and peanut butter. Spread mixture over peaches. Spread mixture evenly over peaches. Press peach mixture into bottom and sides of prepared pan.
Pour remaining 1/4 cup sugar over peaches. Place peaches in prepared pan. Place peach layer over peaches. Pour remaining 1/4 cup sugar over peach layer. Spread peach mixture over peaches. In a large bowl, cream together butter and peanut butter until smooth. Beat in peaches, peach layer and peaches. Beat in butter and sugar. Whip egg into cream butter mixture until light and fluffy. Beat in 1 cup peach mixture and peanut butter.
Pour batter over peach layer. Place peach layer in preheated oven for 45 minutes. Cool completely. Place peach layer into pie crust. Garnish with peaches. Cover and refrigerate overnight.
The next morning, preheat oven to 350 degrees F (175 degrees C).
In a large bowl, beat cream cheese until smooth. Beat in pudding mix, milk, eggs, peaches and peaches. Beat in peaches and peanut butter. Fold in 1/4 cup peaches and peaches. Spread filling over peach layer. Top with peach layer. Chill for at least one hour before cutting into squares. Cut into squares.
