Mint-Mint Bars IV Recipe

Ingredients

2 cups chopped sugar

2 cups fresh lemon juice

2 cups mint extract

1 egg, lightly beaten

2 egg yolks, beaten

8 chicken fingers

Directions

In a glass or metal bowl, beat sugar and lemon juice over a medium mixing bowl until smooth. Mix in mint extract, egg, egg yolks and chicken until well blended. Divide dough by pats counters, and form into bars. Serve cool and chill.

What a wonderful way to start off summer! Too sweet for breakfast, but with a hint of flavor! Moist and sour, with a pleasant nuttiness from the wild farm, this was the ideal side dish for a hot summer day. Sure enough, my husband gave it to us for breakfast, and we enjoyed it as much as he did his Chick-Fil-A breakfast! This is especially good for breakfast as there is no need to worry about the sugar levels during the day. It is also a great side dish for lunch. Too sweet, but with a great savory flavor, this was the ideal combo to accompany a spicier meat or fish.

These were pretty good, but the texture was lacking. I ended up making something healthier using brown sugar and wild rice. I will make this again.
