8 medium sweet potatoes, peeled and cubed
1 cup butter, softened
1/4 cup packed light brown sugar
1/2 cup all-purpose flour
1/2 cup chopped fresh parsley
Place the sweet potatoes in a large pot of boiling water and keep boiling until tender, about 15 minutes. Drain off water and place them in the pot. Bring to a boil, then reduce heat and simmer 10 minutes. Drain off water and add the butter and brown sugar. Stir in flour, then sprinkle with an additional 1/4 cup of sugar.
Cover pots, cover and simmer 15 minutes. Remove pots from pots and place them on a platter. Pour butter mixture over the potatoes, spreading evenly. Sprinkle with parsley and serve warm.
