1 1/2 cups all-purpose flour
1 cup white sugar
1/4 teaspoon salt
1 teaspoon baking soda
1 egg, beaten
1 egg yolks, beaten
1/4 cup milk
3/4 cup vegetable oil
2 tablespoons lemon juice
1 teaspoon vanilla extract
1 (9 inch) unbaked pie crust
Sift together the flour, sugar and salt. Set aside.
In a large bowl, cream together the sugar and baking soda until light and fluffy. Mix in the egg, egg yolks and milk. Beat in the oil and lemon juice. Stir in the flour mixture. Stir in the lemon juice and vanilla. Beat in the egg yolk mixture until just blended. Blend in milk and lemon juice; pour batter into pastry shell.
Bake in preheated oven for 1 hour, or until toothpick inserted in center comes out clean. Cool pie completely before cutting into squares.
