1/2 cup olive oil
2 large tomatoes, chopped
3 cloves garlic, minced
1 large onion, chopped
2 oz. pimento peppers, seeded and sliced
1 cup shredded mozzarella cheese
Peel tomatoes and garlic. In a small skillet, place salt, pepper and Worcestershire sauce over medium heat. Remove from heat and stir chicken sausage in 2 tablespoons olive oil, stirring constantly until evenly browned. Transfer to cooking small bowl and place in casserole dish.
In a large bowl, combine olive oil, tomatoes, garlic and onion. Mix well for 5 minutes. Add piments, cheese and sausage. Transfer to small bowl with spoon to serve. Return salsa to saucepan with shortening and turkey sausage , mixing occasionally, over medium-high heat to prevent sticking. Cook, stirring occasionally, for 7 minutes.
