Caramel Corn Muffins Recipe

Ingredients

4 cups all-purpose flour

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1 cup white sugar

1 teaspoon baking powder

1 egg

1 teaspoon vanilla extract

1 teaspoon cream of tartar

1 1/2 cups milk

1 (10 ounce) package cream cheese, softened

1 teaspoon vanilla extract

1 1/2 teaspoons brown sugar

1 cup butter

2 1/2 cups milk

1 (8 ounce) package cream cheese or butter flavored cream cheese, softened

1 tablespoon white sugar

1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease 6 muffin cups or line with paper liners.

In a large bowl, cream together the flour, baking soda and salt until smooth. Beat in sugar, baking powder and egg. Mix in vanilla and brown sugar. Stir in milk, cream cheese and vanilla. Fold in chocolate chips. Spoon batter into prepared muffin cups.

Bake in preheated oven for 1 hour. Allow to cool and store in refrigerator.
