1 medium chicken breast
2 tomatoes, halved and seeded
1 cup ketchup
1 medium onion, seeded and chopped
1/2 cup soy sauce
1/2 cup water
1/2 cup rice vinegar
3 tablespoons all-purpose flour
3 cups water
1 (16 ounce) can safflower oil for frying
5 tablespoons all-purpose flour
2 teaspoons baking powder
1 tablespoon lemon juice
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
Rub chicken breast halves with tomato sauce. In a small bowl, mix ketchup and lemon juice. Toss chicken breasts with sauce mixture. Place in prepared dish.
Fry chicken breasts in hot water. Drain on paper towels.
I followed this recipe exactly making no changes and these were amazing! Everything was delicious and I could not have been more satisfied. I will make this time and time again.
