1 pound fresh spinach, rinsed and dried
1 (10 ounce) package frozen mixed vegetables
1 (14 ounce) can diced tomatoes with green chile peppers
1 (15 ounce) can salsa
1 large tomato, quartered
In a large bowl, toss together spinach, mixed vegetables, tomatoes, salsa and tomato. Cover and refrigerate until serving.
