3 tablespoons olive oil
1/2 pound roast pork, cut into 1/2 inch cubes
3 tablespoons white sugar
1 clove garlic, crushed
1 pound sage, divided
1/4 cup chopped fresh parsley
3 1/2 cups water
1 teaspoon salt
2 tablespoons lemon juice
2 tablespoons fresh lemon zest, divided
1/4 cup finely chopped fresh parsley
3 teaspoons dried basil
2 servings canned tomato soup
4 apples, peeled and cored
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the pork; cook and stir 8 to 10 minutes. Mix together sugar, garlic, and sage. Saute the pork for 5 minutes, then stir in the sugar/garlic mixture over medium high heat. Mix in the salt, lemon juice, lemon cooking spray, lemon zest, parsley, basil, tomato soup, and apples. Continue to heat for 1 minute, stirring occasionally. When the pork is done, remove it from skillet and place on a plate. Serve immediately.
