2 cups milk
1 teaspoon salt
2 tablespoons butter
2/3 cup all-purpose flour
2/3 cup whole unsalted butter, melted
1/2 teaspoon ground black pepper
2 (8 ounce) packages enhanced wheat and barley cereal
3/4 cup baked potatoes, drained and finely chopped
1/2 cup shredded Cheddar cheese
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
In a medium saucepan over low heat, combine milk, salt and butter. Cook for approximately 3 minutes, stirring constantly. Remove from heat and stir in flour until all the ingredients are thoroughly combined and well mixed. Stir in butter and pepper.
Dry thoroughly between sheets of foil. Place potatoes in a baking dish and cook until tender but firm, about 30 minutes. Spread melted butter over potatoes and sprinkle cheese over potato mixture.
Bake 1 hour in the preheated oven.
