1/2 cup fresh lime juice
1 teaspoon lemon juice
1 teaspoon orange juice
1 teaspoon cranberry juice
1 teaspoon raspberry juice
2 tablespoons cornstarch
1 cup butter, softened
1 cup white sugar
1 egg
1 cup milk
1 cup shredded coconut
1 teaspoon vanilla extract
3 eggs
1 cup chopped pecans
Place lime juice, lemon juice, orange juice and cranberry juice in a blender or food processor. Blend until smooth. Pour mixture into pie crust. Chill and serve while still in glass jars.
To serve: Pour lime mixture over pie in a small bowl. Chill and drizzle coconut cream on top. Garnish with pecans.
