3 tablespoons olive oil
6 cloves garlic, minced
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
1/2 teaspoon dried oregano
1 pound cheese, cubed
Trim the fat from your grilling rubs. Melt the olive oil in a large skillet over medium heat. Stir in the garlic and basil. Cook and stir until the garlic transforms into a green color. Then, stir in the rosemary, oregano, mozzarella and cheese cubes. Return mixture to a simmer.
Reduce heat to medium. Cover saucepan and place steamer over small heat. Cook cheese cubes on medium heat until golden and bubbly. Drain off liquid and turn to medium saucepan. Stir in olive oil, garlic and basil mixture. Bring mixture to a rapid boil and sprinkle with a slice of bread. Reduce heat to low and cook cheese cubes for 2 to 3 minutes.
Once seasoning has been added to the thermometer, place cheese cubes in the pan. Shape them into a tight ball and place them in the pan. Sprinkle with guacamole, a slice of bread or some sort of lettuce and a lime wedge, to serve.
