Stuffed Chicken Recipe

Ingredients

1 pound chicken, cut into cubes

1 small onion, cut into cubes

1 cup spaghetti sauce mix

2 cups cubed potatoes

2 cups baked chicken breast halves

2 eggs

2 tablespoons olive oil

1/2 teaspoon white sugar

1/4 teaspoon salt

1 teaspoon dried basil

1/8 teaspoon dried parsley cornstarch

1 cup sour cream

1 cup shredded mozzarella cheese

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 10x15 inch baking dish.

Bring a large pot of water to a boil. Add chicken cubes, onion, vegetable and sauce mix. Bring to a boil, reduce heat to low, cover and simmer until chicken is done with liquid, about 30 minutes. Drain and chop broth, reserving some of the liquid. When chicken is cooked, remove bones, cut into 1/2 inch pieces.

Place chicken in baking dish, leaving a large amount of liquid in the dish, about 6 tablespoons. Spread mixture over chicken, cover, and add bread cubes. Sprinkle bread cubes with sugar, garlic salt and salt. Sprinkle with pepper. Sprinkle with parsley and basil. Cover dish and bake 30 minutes.

While chicken is baking, mix chicken broth and chicken mixture into a shallow dish or bowl. Place chicken pieces in the egg mixture, cover, and stir together. Sprinkle with mozzarella cheese, cover, and bake 30 minutes. Sprinkle with sour cream and cheese and bake 5 minutes more.
