2 tablespoons olive oil
1 small onion, cut into slits
1 small carrot, cut into thin strips
2 sprigs fresh mint leaves
2 cloves garlic, crushed
1/4 whole dried onion, chopped
2 small tomatoes, chopped
3 cups chicken stock
2 tomatoes, peeled and diced
3 tablespoons mixed dried basil
3 tablespoons dried oregano
1 clove garlic, crushed
1 small fresh sage, finely chopped
salt and ground black pepper to taste
1/4 cup chicken broth
1 pound cooked small, skinless, boneless chicken breast meat

Toast as per recipe 1 tablespoon oil, chopped onion, 2 sprigs of mint, 2 cloves garlic, crushed dried onion and 1 tablespoon tomato. Heat oil in microwave oven, then saute onion and garlic until tender. Mix in chicken stock, tomatoes, basil, oregano, garlic powder and salt and pepper to taste. Bring to a simmer then stir in chicken broth and simmer for 1 hour, or until meat is heated through and can be easily divided into 1-quart serving bowl.
