1 cup brown sugar
2 tablespoons butter
2 teaspoons baking powder
1 egg
1 tablespoon rum
1 cup milk
1 3/4 cups milk
2 tablespoons egg white
1 tablespoon butter
2 tablespoons prepared yellow mustard
1/2 cup sliced fresh strawberries
1/4 cup sliced almonds
1/4 cup chopped walnuts
1 cup sliced almonds
Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
In a large bowl, brown sugar and butter together. Stir in the baking powder, store in an airtight container, to produce a smooth, buttery crumb crust. Beat egg and rum into the brown sugar mixture. Mix in milk, egg white and 1 tablespoon butter. Beat well. Pour mixture into prepared muffin cups. Sprinkle with sliced strawberries, almonds and walnuts.
Bake in preheated oven for 15 minutes, or until a toothpick inserted into the center of the muffin comes out clean. Serve warm, or at room temperature.
