Stuffed Eel Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

1/2 cup chopped celery

1/2 cup chopped onion

1 (10 ounce) package frozen mixed vegetables, thawed

1 cup sliced celery

1 (1 ounce) square unsalted butter

1 tablespoon chopped fresh parsley

1 tablespoon lemon juice

Directions

Preheat oven to 350 degrees F (175 degrees C).

Spread the cream cheese in to the bottom and leave an inch layer. Place the celery on top. Place the onion on top and spread the mixed vegetables. Place the celery over the mixture. Spread the butter on top. Spread the parsley and lemon juice over the cream cheese layer.

Bake in preheated oven for 35 to 40 minutes or until cheese is bubbly and the bottom is golden brown. Garnish with parsley and lemon slices.

This was very good. I used shrimp instead of crab and it turned out great. I did freeze some for future use.
