Easy Irish Style Potato Salad Recipe

Ingredients

4 potatoes, peeled and cubed

1 onion, chopped

3 cloves garlic, minced

1 small green bell pepper, chopped

3 kiwis, peeled and sliced

1/4 cup butter

1 teaspoon dried parsley

1 cup shredded Cheddar cheese

Directions

In a medium saucepan, heat potatoes and onion over medium heat. Stir in garlic, green pepper, kiwis and butter. Sprinkle with parsley, and cook for 5 minutes. Stirring constantly, bring to a full boil, and cook 5 minutes more. Reduce heat to medium; cover, reduce heat to low, and simmer for 10 minutes.

Stir cheese into potato mixture. Garnish with remaining parsley.

This is a great way to use your stored leftover mashed potatoes. It's great on it's own, goes great in salads, and is super easy to make. I put in the potatoes first thing in the morning just to make sure they are nice and crispy, and then just before I turn them in the oven I put some cheese and water on them just to soak up some of the liquid, and then bake them. About a quarter through baking they look like complete mess, but were well worth it. The zucchini and potato chips were a complete mess, but once cleaned up they are even better. Hope that helps.
