2 tablespoons light brown sugar
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1/2 teaspoon vegetable oil
1/2 cup all-purpose flour for dusting
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 eggs
1 1/2 cups vegetable oil for frying
1 cup chopped peaches
1 cup chopped maraschino cherries
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Stir together the sugar, lemon juice, vanilla extract, oil, flour, baking powder, baking soda, cinnamon and salt; set aside.
In a large bowl, cream together the brown sugar, lemon juice and vanilla until smooth. Beat in the egg and oil. Mix in the chopped peaches and maraschino cherries. Drop by rounded spoonfuls onto the prepared cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, until completely crisp. Allow cookies to cool completely on baking sheet before removing to a wire rack to cool completely.
I followed the recipe exactly putting the vinegar to one side and doubling the cream cheese to room temperature. Now my family loves it and I have added sausage and diced carrots later on. My family loves it too! Thank you for sharing!
