1 pound turkey or turkey legs
3 potato shoulders
4 potatoes, peeled and cubed
1 onion, chopped
1 small turnip, chopped
salt and pepper to taste
1/2 cup of butter
2 tablespoons milk
1 1/4 cups all-purpose flour
1 teaspoon dried sage
1/4 teaspoon ground nutmeg
1 cup chopped celery
1 egg, beaten
1 teaspoon butter
1 1/4 cups fresh artichoke hearts
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, mix the turkey, potatoes and onion. Dissolve butter and reserve remaining butter. Blend in milk, flour, sage, pumpkin and salt and pepper. Combine eggs and butter in a medium bowl. Mix well and stir in celery, seasoning roux, 1/2 teaspoon butter, artichoke hearts, onion and parsley. Transfer mixture to the large bowl.
Bake at 375 degrees F (190 degrees C) for approximately at 8 minutes per side. Do not brown in the preheated oven.
