1 cup butter, softened
1 cup light corn syrup
1/2 cup boiling water
1 cup brown sugar
1 cup all-purpose flour
1/4 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 (3 ounce) package instant chocolate pudding mix
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
Place the butter, corn syrup and boiling water in a large bowl. Mix until well-combined, then mix in brown sugar, flour, baking soda and vanilla extract. Stir in the brown sugar mixture. Drop by rounded spoonfuls onto the prepared cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, until just set. Meanwhile, press the chocolate pudding into the center of each cookie to extend the life of the cookies. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
