1/2 cup butter
1 (3 ounce) package cream cheese, softened
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 cup pecans, chopped
Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9 inch deep dish pie pan. Mix together the butter and cream cheese. Beat in sugar, egg, vanilla extract and lemon zest. Pour mixture into the pie pan.
Bake in preheated oven for 30 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue to bake for 10 minutes, before leaving pie uncovered. Allow pie to cool on a wire rack for 10 minutes before cutting into squares.
